Ingredients
Scale
- 4 cups sweet corn (fresh, frozen, or canned and drained)
- 2 cups broccoli florets, finely chopped
- 1 red bell pepper, diced
- 1 cup zucchini, diced
- 1.5 lbs cooked protein (shredded chicken breast or browned lean ground beef)
- 1.5 cups Greek yogurt (plain, non-fat)
- 2 large eggs, beaten
- 2 cups shredded sharp cheddar cheese (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup panko breadcrumbs (optional topping)
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Grease a large 9×13 inch baking dish with non-stick cooking spray or a light coating of olive oil. If you are using chicken, ensure it is fully cooked and shredded. If you are using beef, brown it in a skillet over medium heat and drain any excess fat before starting the assembly process.
- In a large mixing bowl, combine the Greek yogurt, beaten eggs, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until the mixture is smooth. Stir in 1 cup of the shredded cheddar cheese. This mixture acts as the healthy, creamy binder for your vegetables and meat.
- Add the corn, broccoli, bell pepper, zucchini, and your choice of protein (chicken or beef) into the mixing bowl. Toss everything together until the vegetables and meat are evenly coated with the yogurt mixture. Transfer the entire mixture into your prepared 9×13 inch baking dish, spreading it out into an even layer.
- Top the casserole with the remaining 1 cup of shredded cheddar cheese and the panko breadcrumbs if you want an extra crunch. Place the dish in the center rack of the oven. Bake for 30 to 35 minutes, or until the cheese is bubbly and the edges are starting to turn a golden brown color.
- Remove the casserole from the oven and let it rest for 5 to 10 minutes. This resting period allows the sauce to set, making it easier to slice into clean portions. Garnish with fresh chopped parsley and serve warm directly from the dish.
- Cook Time: 50 minutes
