Ingredients
Scale
- 2 lbs mixed vegetables (broccoli florets, cauliflower, sliced carrots, and bell peppers)
- 1 lb cooked protein (shredded chicken breast or browned lean ground beef)
- 2 cups shredded sharp cheddar cheese (divided)
- 1 cup Greek yogurt or low-fat sour cream
- 1/2 cup low-sodium chicken or beef broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Optional: 1/2 cup panko breadcrumbs for a crunchy topping
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a large 9×13 inch baking dish with olive oil or non-stick cooking spray. If you are using fresh vegetables, steam them for 3-5 minutes until they are slightly tender but still crisp. If using frozen vegetables, thaw them completely and pat them dry to prevent the casserole from becoming watery. In a small bowl, whisk together the Greek yogurt, broth, garlic powder, onion powder, smoked paprika, salt, and pepper until the mixture is smooth and creamy.
- In a large mixing bowl, combine the steamed vegetables, your choice of cooked chicken or beef, and half of the shredded cheddar cheese. Pour the yogurt mixture over the ingredients and toss gently until everything is evenly coated. Transfer the mixture into the prepared baking dish, spreading it out in an even layer. Sprinkle the remaining cheese and the optional breadcrumbs over the top. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the top is golden brown.
- Once the casserole is cooked through and the cheese is perfectly melted, remove it from the oven. Let the dish rest for about 5 to 10 minutes; this allows the sauce to thicken and makes serving much easier. Garnish the top with freshly chopped parsley for a pop of color and freshness. Scoop generous portions onto plates or into shallow bowls. This dish stands alone perfectly, but you can also serve it alongside a crisp green salad or some toasted whole-grain bread.
