Ingredients
Scale
- 8 oz High-protein pasta (chickpea, lentil, or edamame pasta)
- 2 Ripe avocados, pitted and peeled
- 1/2 cup Non-fat plain Greek yogurt
- 2 cloves Garlic, minced
- 1 cup Fresh baby spinach (for extra green color)
- 1 tbsp Lemon juice (prevents oxidation)
- 1/4 cup Fresh basil leaves
- 1/4 cup Grated Parmesan cheese (or nutritional yeast for vegan)
- 1/2 tsp Red pepper flakes
- Salt and black pepper to taste
- 1/2 cup Reserved pasta water
- Cherry tomatoes and extra basil for Christmas garnish
Instructions
- Start by bringing a large pot of salted water to a boil. Add your choice of high-protein pasta and cook according to the package instructions until it reaches al dente texture. Before draining the pasta, carefully scoop out about half a cup of the starchy pasta water and set it aside. This water is the secret to getting a smooth, cohesive sauce later on.
- While the pasta cooks, prepare the signature green sauce. In a food blender or food processor, combine the avocados, Greek yogurt, minced garlic, baby spinach, lemon juice, basil, and Parmesan cheese. Pulse until the mixture is completely smooth and creamy. If the sauce is too thick to blend, add a tablespoon of the reserved pasta water to loosen it up. Season with salt, pepper, and red pepper flakes.
- Drain the pasta and return it to the warm pot. Pour the creamy avocado sauce over the hot noodles. Toss gently with tongs, adding the remaining reserved pasta water a little at a time until the sauce coats every strand perfectly. To give it that “Christmas TikTok Famous” look, plate the pasta in a swirl and garnish with halved cherry tomatoes and fresh basil leaves to mimic holiday colors. Serve immediately while warm.
