Ingredients
Scale
- 2 large English cucumbers (hothouse cucumbers work best)
- 1/2 cup plain Greek yogurt or sour cream
- 1 tablespoon rice vinegar
- 1 clove garlic, finely minced or grated
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon everything bagel seasoning (the secret TikTok ingredient!)
- 1/4 teaspoon red pepper flakes (optional for heat)
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup pomegranate seeds (for the Christmas look)
- Salt and black pepper to taste
Instructions
- Wash your cucumbers thoroughly. Using a vegetable peeler or a mandoline, shave the cucumbers into long, thin ribbons. Stop when you reach the watery core with the seeds. These long ribbons will act as your “pasta.” Place the ribbons in a large mixing bowl or a large deli container if you want to do the “TikTok shake.”
- In a separate small bowl, whisk together the Greek yogurt, rice vinegar, minced garlic, fresh dill, and everything bagel seasoning. Taste the dressing and add a pinch of salt and pepper. If the dressing feels too thick, you can add a teaspoon of water or lemon juice to thin it out to a “saucy” consistency.
- Pour the creamy dressing over the cucumber ribbons. Add the thinly sliced red onions. If you are using a container with a lid, close it tight and shake vigorously—this is the viral method that ensures every ribbon is perfectly coated. Otherwise, use tongs to gently toss the mixture so you don’t break the delicate cucumber ribbons.
- Transfer the “pasta” to a festive serving bowl. Top with crumbled feta cheese, red pepper flakes, and the pomegranate seeds. The red pomegranates against the green cucumber and white cheese create a beautiful Christmas aesthetic. Serve immediately while the cucumbers are crisp and cold.
