Ingredients
Scale
- 2 large English cucumbers (hothouse cucumbers)
- 1/2 cup Greek feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon chili crisp (for that extra crispy kick)
- 2 cloves garlic, minced
- 1 teaspoon honey or agave nectar
- 1/2 teaspoon kosher salt
- 1 tablespoon toasted sesame seeds
- Fresh mint or cilantro for garnish
Instructions
- Place the cucumbers on a sturdy cutting board. Use the side of a wide chef’s knife or a heavy rolling pin to firmly press down on the cucumbers until they split and crack. Once smashed, slice them into bite-sized, irregular chunks. Place the chunks in a colander, sprinkle with salt, and let them sit for 5-10 minutes to drain excess water. This step ensures your salad stays crispy and doesn’t get soggy.
- In a medium mixing bowl, combine the crumbled feta cheese and Greek yogurt. Use a fork or a small whisk to mash them together until the mixture is relatively smooth but still has some nice salty chunks. Stir in the minced garlic, rice vinegar, sesame oil, and honey. Mix until the dressing is well-incorporated and creamy.
- Pat the drained cucumbers dry with a paper towel and add them to the bowl with the creamy feta mixture. Add the chili crisp over the top for that signature TikTok “extra crispy” texture and heat. Gently toss everything together until every nook and cranny of the smashed cucumbers is coated. Transfer to a serving platter, garnish with sesame seeds and fresh herbs, and serve immediately while cold.
