1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

Zest and juice of 1 lemon

1/4 cup fresh basil, chopped

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

8 oz spaghetti or zucchini noodles

Grated Parmesan cheese for serving

Instructions
 

Begin by cooking the spaghetti or zucchini noodles according to package instructions. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

      Add the shrimp to the skillet, seasoning with salt, pepper, and red pepper flakes if using. Cook for 2-3 minutes on each side until they turn pink and opaque.

        Stir in the lemon zest and juice, cooking for another minute to combine flavors.

          Toss the cooked noodles into the skillet with the shrimp mixture, along with the chopped basil. Mix everything well to coat the noodles with the sauce.

            Serve hot, topped with grated Parmesan cheese and additional basil if desired.
