1 cup almonds (or almond flour)

1 cup pitted dates

1/2 cup raw cocoa powder

1/4 cup almond milk

1 tsp vanilla extract

Pinch of salt

For the Strawberry Layer:

1 cup raw cashews (soaked in water for 4 hours, then drained)

1 cup fresh strawberries (halved, plus extra for garnish)

1/4 cup maple syrup

1/4 cup coconut cream

1 tsp vanilla extract

1 tbsp lemon juice

For the Vanilla Layer:

1 cup raw cashews (soaked in water for 4 hours, then drained)

1/4 cup coconut milk

1/4 cup maple syrup

1 tsp vanilla extract

1/4 tsp sea salt

For Toppings:

Dark chocolate shavings

Fresh strawberries

Fresh mint leaves

Instructions
 

Prepare the Chocolate Layer:

    - In a food processor, combine the almonds, pitted dates, cocoa powder, almond milk, vanilla extract, and salt.

      - Process until the mixture is smooth and sticky.

        - Press this mixture firmly into the bottom of a lined 8-inch square pan to form the first layer. Place in the refrigerator to set.

          Make the Strawberry Layer:

            - Rinse the food processor and add the soaked cashews, strawberries, maple syrup, coconut cream, vanilla extract, and lemon juice.

              - Blend until smooth and creamy.

                - Pour this mixture over the chocolate layer in the pan, smoothing the top with a spatula. Refrigerate until set.

                  Prepare the Vanilla Layer:

                    - Clean the food processor again, then add the soaked cashews, coconut milk, maple syrup, vanilla extract, and sea salt.

                      - Blend until very smooth and creamy.

                        - Spread this mixture over the strawberry layer, smoothing it out to create an even layer.

                          Chill the Cake:

                            - Cover the pan and refrigerate all layers for at least 4 hours, or overnight for best results.

                              Slice and Serve:

                                - Once set, remove the cake from the fridge and the pan. Cut into 13 squares or desired shapes.

                                  - Garnish each slice with dark chocolate shavings, fresh strawberries, and mint leaves.
