Ingredients

1 cup rolled oats

1 cup low-fat cottage cheese

4 large egg whites

Instructions

Blend the Oats: In a blender or food processor, add the rolled oats and blend until they reach a flour-like consistency. This should take about 30 seconds.

Combine Ingredients: Add the low-fat cottage cheese and egg whites to the blended oats. Blend again until the mixture is smooth and creamy. Make sure there are no chunks of cottage cheese remaining.

Heat the Pan: Preheat a non-stick skillet or frying pan over medium heat. You can lightly spray it with cooking oil or use a small amount of butter for flavor.

Cook the Pancakes: Pour about 1/4 cup of the batter onto the hot skillet for each pancake. Cook for about 2-3 minutes on one side until bubbles form on the surface and the edges look set. Flip it and cook for another 1-2 minutes on the other side, until golden brown.

Serve Warm: Once cooked, remove the pancakes from the skillet and keep them warm. Serve your fluffy protein pancakes with your favorite toppings like fresh fruits, yogurt, or a drizzle of honey.
