200g dark chocolate (70% cocoa), chopped

3 large eggs, separated

50g granulated sugar

1 tsp vanilla extract

1/2 cup heavy whipping cream

A pinch of salt

Fresh berries and mint leaves for garnish (optional)

Instructions
 

Melt the Chocolate: In a heatproof bowl, melt the dark chocolate over a simmering pot of water (double boiler method) until smooth. Remove from heat and let it cool slightly.

    Prepare Egg Yolks: In a separate bowl, whisk together the egg yolks and half of the granulated sugar (25g) until pale and creamy. Stir in the vanilla extract.

      Combine Yolks with Chocolate: Gradually add the melted chocolate into the egg yolk mixture, mixing continuously until well incorporated.

        Whip Egg Whites: In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 25g of sugar and continue to beat until stiff peaks form.

          Whip Cream: In another bowl, whip the heavy cream until soft peaks form.

            Fold Ingredients Together: Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture. Then, fold in the whipped cream until no streaks remain.

              Fill Mini Containers: Spoon or pipe the mousse into 30 transparent mini containers, filling them about 3/4 full.

                Chill: Refrigerate the mousse for at least 2 hours, or until set.

                  Garnish: Before serving, top each mini container with fresh berries and a sprig of mint for an elegant touch.
