For the Pecan Sandies Crust:

1 ½ cups Pecan Sandies cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Lemon Cream Cheese Layer:

8 oz cream cheese, softened

1 cup powdered sugar

1 cup whipped cream (or Cool Whip)

2 tablespoons lemon juice

Zest of 1 lemon

For the Lemon Pudding Layer:

2 cups milk

1 ½ cups instant lemon pudding mix

For the Whipped Topping Layer:

2 cups whipped cream (or Cool Whip)

Lemon zest for garnish

Fresh mint leaves for garnish (optional)

Instructions
 

Make the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a mixing bowl, combine the crushed Pecan Sandies cookies, melted butter, and granulated sugar until well mixed.

        - Press the mixture evenly into the bottom of a 9x13 inch baking dish to form the crust.

          - Bake for 10 minutes or until lightly golden. Remove and let it cool completely.

            Prepare the Lemon Cream Cheese Layer:

              - In a medium bowl, beat the softened cream cheese until smooth.

                - Gradually add the powdered sugar and mix until well combined.

                  - Stir in the lemon juice and lemon zest until the mixture is light and fluffy.

                    - Gently fold in the whipped cream until fully incorporated.

                      - Spread this mixture evenly over the cooled crust.

                        Make the Lemon Pudding Layer:

                          - In another bowl, whisk together the milk and instant lemon pudding mix until smooth and thickened (about 2 minutes).

                            - Pour the pudding over the lemon cream cheese layer and spread evenly.

                              Top with Whipped Topping:

                                - Spread the whipped cream evenly over the lemon pudding layer.

                                  - Garnish with lemon zest on top and add fresh mint leaves if using.

                                    Chill & Serve:

                                      - Cover the dessert with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow all layers to set properly.
