Ingredients
  

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup buttermilk

½ cup rainbow sprinkles (plus extra for topping)

Red and blue food coloring (optional)

1 batch of your favorite vanilla frosting

1 teaspoon almond extract (optional, for frosting)

Edible glitter or star-shaped sprinkles for decoration (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

          Combine Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined; do not overmix.

            Fold in Sprinkles: Gently fold in the rainbow sprinkles, being careful not to overmix. If desired, split the batter into two bowls and add red and blue food coloring to create a swirled effect in the cupcakes.

              Fill Cupcake Liners: Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.

                Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

                  Prepare the Frosting: While the cupcakes are cooling, prepare your favorite vanilla frosting. If desired, mix in the almond extract for an extra layer of flavor.

                    Frost and Decorate: Once the cupcakes are completely cool, frost with the vanilla frosting and top with extra rainbow sprinkles and edible glitter or star-shaped sprinkles for a festive touch.
