Ingredients
  

2 cups ripe watermelon, cubed

2 ripe peaches, sliced

1 cup fresh mozzarella balls (bocconcini), halved

¼ cup fresh mint leaves, torn

¼ cup feta cheese, crumbled

Juice of 1 lime

1 tablespoon honey

Salt and pepper to taste

Optional: A handful of arugula or baby spinach for added greens

Instructions
 

In a large mixing bowl, combine the cubed watermelon and sliced peaches.

    Add the halved mozzarella balls and torn mint leaves to the bowl.

      In a small bowl, whisk together the lime juice and honey until well combined. Pour this dressing over the fruit and cheese mixture.

        Gently toss all the ingredients to coat them with the dressing, being careful not to break the mozzarella balls.

          Season with salt and pepper to taste. If desired, add a handful of arugula or baby spinach for added texture and flavor.
