Ingredients
  

4 boneless, skinless chicken breasts

1 can (20 oz) pineapple chunks in juice, undrained

1/2 cup soy sauce

1/4 cup honey

2 tablespoons chili garlic sauce (adjust to taste)

1 teaspoon ground ginger

1 bell pepper, sliced (any color)

1 red onion, sliced

2 cloves garlic, minced

1 cup sugar snap peas (optional)

Salt and pepper to taste

Cooked rice, for serving

Instructions
 

In your slow cooker, combine the pineapple chunks with juice, soy sauce, honey, chili garlic sauce, and ground ginger. Stir well to combine.

    Season the chicken breasts with salt and pepper, then nestle them into the sauce mixture.

      Add the sliced bell pepper, red onion, and minced garlic on top of the chicken. If using, add the sugar snap peas.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.

          Once done, shred the chicken gently using two forks and mix it with the sauce and vegetables.

            Serve over cooked rice, drizzling extra sauce on top if desired.
