Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

Zest and juice of 1 lemon

Zest and juice of 1 lime

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

In a medium bowl, whisk together olive oil, lemon juice, lime juice, garlic, smoked paprika, salt, and black pepper.

Add the shrimp to the bowl and toss to coat them in the marinade. Cover and let marinate in the fridge for 30 minutes.

Preheat your grill to medium-high heat. If using skewers, thread the marinated shrimp onto the skewers.

Grill the shrimp for 2-3 minutes on each side until they are pink and opaque. Cook in batches if necessary to avoid crowding the grill.

Remove the skewers from the grill and transfer them to a serving platter.

Garnish with fresh parsley and serve with lemon wedges on the side.
