Ingredients
  

  • 1 cup unsweetened shredded coconut for a chewy texture
  • 0.5 cup almond flour for a nutty flavor
  • 0.5 cup all-purpose flour to bind the cookies
  • 0.5 cup granulated sugar for sweetness
  • 0.5 cup brown sugar for moisture and flavor
  • 1 large egg to bind the ingredients
  • 1 teaspoon vanilla extract for flavor
  • 0.5 cup chocolate chips for a chocolatey bite
  • 0.5 cup whole almonds for topping and crunch
  • 0.5 teaspoon baking soda to help cookies rise
  • 0.25 teaspoon salt to enhance flavor

Instructions
 

  • In a large mixing bowl, combine the shredded coconut, almond flour, all-purpose flour, granulated sugar, brown sugar, baking soda, and salt.
  • In a separate bowl, whisk together the egg and vanilla extract until well combined.
  • Pour the egg mixture into the dry ingredients and mix until a dough forms.
  • Fold in the chocolate chips and whole almonds into the cookie dough.
  • Preheat the air fryer to 320°F (160°C) for about 5 minutes.
  • Scoop tablespoon-sized portions of the dough and place them in the air fryer basket, leaving space between each cookie.
  • Air fry the cookies for 10 minutes, then check for doneness; they should be golden brown. If needed, air fry for an additional 2-5 minutes.
  • Once done, remove the cookies from the air fryer and let them cool on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For a softer cookie, slightly underbake them.
