1.5 pounds baby potatoes, halved or quartered

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried rosemary (or your favorite herb)

½ teaspoon paprika

Salt and pepper, to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.

    Prepare the Potatoes: In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, dried rosemary, paprika, salt, and pepper. Toss everything until the potatoes are well coated.

      Add Parmesan: Sprinkle half of the grated Parmesan cheese over the seasoned potatoes and toss again to ensure even coverage.

        Air Fry the Potatoes: Place the seasoned potatoes in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer. Cook for 15-20 minutes, shaking the basket halfway through for even cooking. The potatoes should be golden brown and crisp.

          Final Touch: Once the potatoes are done, remove them from the air fryer and sprinkle the remaining Parmesan cheese over the hot potatoes. Toss gently to combine, allowing the cheese to melt slightly.

            Garnish and Serve: Transfer the crispy potatoes to a serving dish, garnish with chopped fresh parsley, and serve warm.
