Ingredients
  

  • 2 lbs baby potatoes halved or quartered
  • 3 tablespoons olive oil for coating
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon dried rosemary crushed
  • 1 teaspoon dried thyme crushed
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley chopped for garnish

Instructions
 

  • Preheat the air fryer to 400 degrees Fahrenheit.
  • In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, dried rosemary, dried thyme, salt, and black pepper.
  • Toss the potatoes until they are evenly coated with the oil and herb mixture.
  • Place the seasoned potatoes in the air fryer basket in a single layer, ensuring they are not overcrowded.
  • Cook the potatoes for 20 minutes, shaking the basket halfway through for even cooking.
  • Once the potatoes are golden brown and crispy, remove them from the air fryer and garnish with fresh chopped parsley.

Notes

For extra crispiness, you can soak the potatoes in water for 30 minutes before seasoning. Store leftovers in an airtight container in the refrigerator for up to 3 days.
