Ingredients
  

  • 2 cups fresh spinach washed and chopped
  • 1 cup feta cheese crumbled
  • 1 tablespoon fresh dill chopped
  • 3 cloves garlic minced
  • 1 large egg beaten
  • 10 sheets phyllo dough thawed
  • 1/4 cup olive oil for brushing
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

Instructions
 

  • In a mixing bowl, combine the chopped spinach, crumbled feta cheese, chopped dill, minced garlic, beaten egg, salt, and black pepper. Mix until well combined and set aside.
  • Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Layer another sheet on top and brush again. Cut the layered phyllo into strips about 3 inches wide.
  • Place a tablespoon of the spinach mixture at one end of each phyllo strip. Fold the strip over the filling to create a triangle, then continue folding the triangle along the strip until you reach the end, sealing the filling inside.
  • Preheat the air fryer to 375°F (190°C). Arrange the spanakopita bites in a single layer in the air fryer basket. Brush the tops with olive oil for extra crispiness.
  • Cook the spanakopita bites in the air fryer for 15-20 minutes, or until they are golden brown and crispy. Check halfway through and shake the basket to ensure even cooking.
  • Once cooked, remove the bites from the air fryer and let them cool slightly before serving. They can be served warm or at room temperature.

Notes

Tip 1: Ensure the phyllo dough is fully thawed and kept covered to prevent it from drying out.
Tip 2: These bites can be made ahead of time and frozen; just cook them from frozen in the air fryer without thawing.
Variation: Add cooked ground lamb or chicken to the filling for a heartier option.
