Air Fryer Stuffed Zucchini Boats

Ingredients
  

  • 4 medium zucchini halved lengthwise and seeds scooped out
  • 1 cup cooked quinoa can substitute with cooked rice
  • 1 cup ground turkey or ground chicken
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella cheese for topping
  • 1 teaspoon Italian seasoning or to taste
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper or to taste
  • 2 tablespoons olive oil for drizzling

Instructions
 

  • Preheat the air fryer to 350°F (175°C).
  • In a skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  • Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
  • Stir in the cooked quinoa, Italian seasoning, salt, and black pepper. Cook for an additional 2 minutes to combine flavors.
  • Spoon the turkey and quinoa mixture into the hollowed-out zucchini halves, packing them lightly.
  • Top each stuffed zucchini with shredded mozzarella cheese and place them in the air fryer basket.
  • Air fry for 15-20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

Notes

For best results, choose medium-sized zucchinis. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best texture.
