Air Fryer Teriyaki Chicken Bowls

Delicious and easy-to-make teriyaki chicken bowls cooked in an air fryer, served with rice and vegetables.

Ingredients
  

  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 0.5 cup teriyaki sauce store-bought or homemade
  • 2 cups cooked jasmine rice for serving
  • 1 cup broccoli florets fresh or frozen
  • 1 cup carrots sliced thinly
  • 1 tablespoon olive oil for tossing vegetables
  • 2 teaspoons sesame seeds for garnish
  • 2 green onions sliced for garnish

Instructions
 

  • In a mixing bowl, combine the chicken pieces and teriyaki sauce, ensuring all chicken is well coated. Let marinate for about 10 minutes.
  • Preheat your air fryer to 380°F (193°C) for about 5 minutes.
  • Place the marinated chicken in the air fryer basket in a single layer. Cook for 10 minutes, shaking the basket halfway through.
  • While the chicken is cooking, toss the broccoli and carrots with olive oil in a separate bowl.
  • After 10 minutes, add the broccoli and carrots to the air fryer basket with the chicken. Cook for an additional 10 minutes until the chicken is cooked through and vegetables are tender.
  • Once done, check that the chicken reaches an internal temperature of 165°F (74°C). Remove from the air fryer.
  • To serve, place a scoop of jasmine rice in each bowl, top with the teriyaki chicken and vegetables, and garnish with sesame seeds and sliced green onions.

Notes

For extra flavor, you can add a drizzle of extra teriyaki sauce on top before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
