Ingredients

  • 1 pound chicken breast cut into 1-inch cubes
  • 0.5 cup teriyaki sauce store-bought or homemade
  • 2 tablespoons soy sauce low sodium recommended
  • 1 tablespoon honey for sweetness
  • 1 tablespoon rice vinegar adds tanginess
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon ginger powder for warmth
  • 1 bell pepper red cut into 1-inch pieces
  • 1 bell pepper green cut into 1-inch pieces
  • 1 medium onion cut into wedges
  • 8 skewers wooden or metal if using wooden, soak in water for 30 minutes

Instructions

  • In a large bowl, combine the teriyaki sauce, soy sauce, honey, rice vinegar, garlic powder, and ginger powder. Mix well.
  • Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and let marinate for at least 15 minutes.
  • While the chicken is marinating, prepare the vegetables by cutting the bell peppers and onion into 1-inch pieces.
  • After marinating, thread the chicken, bell peppers, and onion onto the skewers, alternating between chicken and vegetables.
  • Preheat the air fryer to 400 degrees Fahrenheit for about 5 minutes.
  • Place the skewers in the air fryer basket in a single layer, making sure they are not overcrowded. Cook for 15-20 minutes, turning halfway through, until the chicken is cooked through and has a nice char.

Notes

Serve the skewers with extra teriyaki sauce for dipping. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best results.
