Ingredients
  

  • 2 cups kale leaves stems removed and torn into bite-sized pieces
  • 1 cup sweet potatoes thinly sliced
  • 1 cup zucchini thinly sliced
  • 1 cup carrots thinly sliced or julienned
  • 2 tablespoons olive oil for coating
  • 1 teaspoon sea salt to taste
  • 0.5 teaspoon paprika for added flavor
  • 0.5 teaspoon garlic powder for seasoning

Instructions
 

  • Preheat the air fryer to 350°F (175°C).
  • In a large mixing bowl, combine the kale leaves, sweet potatoes, zucchini, and carrots.
  • Drizzle the olive oil over the veggies and sprinkle with sea salt, paprika, and garlic powder.
  • Toss the mixture until all the veggies are evenly coated with the oil and seasonings.
  • Place the veggie mixture in the air fryer basket in a single layer, working in batches if necessary.
  • Air fry for about 15-20 minutes, shaking the basket halfway through, until the chips are crispy and golden.

Notes

Store leftover veggie chips in an airtight container at room temperature for up to 2 days. For extra crunch, reheat in the air fryer for a few minutes before serving.
