Ingredients
  

2 cups almond flour

1/2 cup coconut sugar (or brown sugar)

1/4 cup melted coconut oil (or unsalted butter)

1 large egg

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Wet Ingredients: In a large mixing bowl, whisk together the melted coconut oil (or butter), coconut sugar, and egg until the mixture is smooth and well-combined.

      Add Flavor: Mix in the lemon zest, fresh lemon juice, and vanilla extract. Stir until everything is evenly incorporated.

        Mix Dry Ingredients: In a separate bowl, combine the almond flour, baking soda, and salt. Gradually add the dry mixture into the wet mixture, stirring until a dough forms.

          Shape the Cookies: Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart. Use your hands to gently flatten them, as they won't spread much during baking.

            Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake!

              Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

                Optional Dusting: Once cooled, lightly dust the cookies with powdered sugar for an extra sweet touch.
