Ingredients

1 cup mini marshmallows

1 cup coconut flakes (sweetened)

1 cup diced fresh pineapple

1 cup mandarin orange segments (canned or fresh)

1 cup maraschino cherries, halved

1 cup Greek yogurt (vanilla-flavored)

1/2 cup chopped pecans or walnuts

1 teaspoon vanilla extract

A sprinkle of cinnamon (optional)

Instructions

In a large mixing bowl, combine the mini marshmallows, coconut flakes, diced pineapple, mandarin orange segments, and maraschino cherries. Stir gently to mix the ingredients well.

In a separate bowl, whisk together the Greek yogurt and vanilla extract until smooth. If desired, add a sprinkle of cinnamon for added flavor.

Pour the yogurt mixture over the fruit and marshmallow mixture. Carefully fold everything together until the ingredients are evenly coated with the yogurt.

Gently fold in the chopped pecans or walnuts for an added crunch.

Cover the bowl with plastic wrap or a lid and refrigerate for at least an hour to allow the flavors to meld together.

Before serving, give the ambrosia salad a gentle stir and adjust the sweetness if needed. Serve chilled as a delightful side dish or dessert.
