1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup Andes mint baking chips

Extra Andes mints or crushed mint candies for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare baking sheets by lining them with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

      Add Eggs and Vanilla: Beat in the eggs one at a time, blending well after each addition. Stir in the vanilla extract until evenly incorporated.

        Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

            Fold in Andes Mint Chips: Gently fold in the Andes mint chips until they are evenly distributed throughout the cookie dough.

              Scoop and Shape Cookies: Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. If desired, press a piece of an Andes mint or a sprinkle of crushed mint candies onto each cookie.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked. The cookies may seem soft but will firm up as they cool.
