Apple Cider Pork Roast

3-4 pounds pork shoulder or pork loin

2 cups apple cider

1 medium onion, sliced

4 cloves garlic, minced

2 tablespoons Dijon mustard

2 tablespoons brown sugar

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

4 carrots, cut into chunks

4 potato, cut into chunks

Instructions
 

Preheat your oven to 325°F (163°C).

    In a small bowl, whisk together the apple cider, Dijon mustard, brown sugar, rosemary, thyme, salt, and pepper. Set aside.

      Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Season the pork roast generously with salt and pepper.

        Sear the pork on all sides until golden brown, about 5-7 minutes per side. Remove the pork from the pot and set aside.

          Add the sliced onion and minced garlic to the pot. Sauté until the onions are translucent, about 3-4 minutes.

            Pour the apple cider mixture over the onions and garlic, scraping any brown bits off the bottom of the pot.

              Return the pork roast to the pot, then add in the carrots and potatoes around the roast.

                Cover the pot with a lid and transfer it to the preheated oven. Roast for about 3 hours, or until the pork is fork-tender.

                  Remove the pot from the oven, let it rest for about 15 minutes. Slice the pork and serve it with the vegetables and pan sauce.
