1 cup unsweetened almond milk (or any milk of choice)

1/4 cup chia seeds

1 tablespoon maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 large apple (peeled, cored, and diced)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup rolled oats

1/4 cup chopped nuts (walnuts or pecans work well)

2 tablespoons coconut oil (melted)

1 tablespoon brown sugar (or coconut sugar)

Pinch of salt

Prepare Chia Pudding:

    In a medium bowl, combine almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well until thoroughly mixed. Let it sit for about 5-10 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until it thickens.

      Cook the Apples:

        In a medium saucepan over medium heat, add the diced apples, cinnamon, nutmeg, and a splash of water. Sauté for about 5-7 minutes, or until the apples are tender and fragrant. Set aside to cool slightly.

          Make the Crumble Topping:

            In a bowl, mix rolled oats, chopped nuts, melted coconut oil, brown sugar, and a pinch of salt. Use your fingers to combine and break the mixture into clumps. You can bake this crumble in a preheated oven at 350°F (175°C) for about 10 minutes until golden brown, or simply leave it raw for added texture.
