For the Cookies:

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup chopped apples (peeled and cored)

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk

For the Apple Pie Topping:

1 cup chopped apples, diced

¼ cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, and milk, and mix until creamy and well combined. Chill in the refrigerator while you prepare the cookie dough.

    Make the Apple Pie Filling: In a small bowl, combine the diced apples, granulated sugar, ground cinnamon, and lemon juice. Toss gently to coat, and set aside.

      Prepare the Cookie Dough: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped apples.

          Assemble the Cookies: Using a cookie scoop, drop a tablespoon of cookie dough onto the prepared baking sheet. Make a small indentation in the center of each mound and add about 1 teaspoon of the cheesecake filling. Top with a scoop of the apple pie filling. Cover with another tablespoon of cookie dough to seal.

            Bake: Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

              Serve: Enjoy warm or at room temperature, drizzled with caramel sauce or a dusting of powdered sugar, if desired.
