Apple Pie Pancakes with Vanilla Maple Syrup

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons unsalted butter, melted

1 cup apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/4 cup brown sugar

1 teaspoon vanilla extract

For the Vanilla Maple Syrup:

1/2 cup maple syrup

1 teaspoon vanilla extract

Pinch of salt

Prepare the Apples: In a medium bowl, toss the diced apples with brown sugar, cinnamon, and nutmeg. Set aside while you prep the pancake batter.

    Make the Batter: In a larger mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk together the buttermilk, egg, and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the prepared apples.

      Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray. Pour about 1/3 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.

        Prepare the Vanilla Maple Syrup: In a small saucepan over low heat, combine the maple syrup, vanilla extract, and a pinch of salt. Stir until warm and well combined. Remove from heat.

          Serve: Stack the warm pancakes on plates and drizzle with the vanilla maple syrup. For an extra touch, you can add whipped cream or a scoop of vanilla ice cream on top.
