2 cups cooked and shredded chicken breast

4 cups mixed salad greens (like romaine, spinach, and cabbage)

1 cup shredded carrots

1 bell pepper, julienned (red or yellow for color)

1 cup snap peas, trimmed

1/2 cup chopped green onions

1/2 cup toasted almonds or cashews

1/4 cup sesame seeds

1/2 cup crispy fried noodles (optional, for extra crunch)

Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

1 clove garlic, minced

Salt and pepper, to taste

Instructions
 

Prepare the Dressing: In a medium bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic until well combined. Adjust seasoning with salt and pepper. Set aside.

    Arrange the Base: In a large salad bowl, add the mixed salad greens as the base.

      Add Protein and Veggies: Layer the shredded chicken on top of the greens. Then, evenly distribute the shredded carrots, julienned bell pepper, snap peas, and chopped green onions over the chicken.
