2 boneless, skinless chicken breasts

4 cups mixed greens (like romaine, spinach, and bok choy)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/2 cup red cabbage, finely shredded

1/4 cup chopped green onions (scallions)

1/4 cup cilantro, chopped (optional)

1/2 cup edamame, shelled

1/4 cup toasted sesame seeds

For the Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 tablespoon fresh ginger, grated

1 clove garlic, minced

1/2 teaspoon chili flakes (optional, for heat)

Instructions
 

Cook the Chicken: In a pot of boiling water, cook the chicken breasts for about 15-20 minutes or until fully cooked (internal temperature should reach 165°F). Remove from water and let cool, then shred the chicken using two forks or chop into bite-sized pieces.

    Prepare the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and chili flakes until well combined. Adjust sweetness and spice according to your preference.

      Assemble the Salad: In a large bowl, combine mixed greens, shredded carrots, red bell pepper, red cabbage, green onions, cilantro (if using), and edamame. Toss gently to mix.

        Add Chicken and Dressing: Add the shredded chicken to the salad mixture and pour the dressing over the top. Toss everything together until nicely coated.
