Ingredients
  

4 medium cucumbers, thinly sliced

1/4 red onion, finely sliced

1 carrot, julienned

1/4 cup fresh cilantro, chopped

1/2 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon fresh ginger, grated

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon toasted sesame seeds

Instructions
 

In a large bowl, combine the sliced cucumbers, red onion, carrot, and cilantro.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, and red pepper flakes until well blended.

      Pour the dressing over the cucumber mixture and toss gently to coat all the vegetables evenly.

        Let the salad sit for at least 15 minutes at room temperature or refrigerate for up to an hour to allow the flavors to meld.

          Just before serving, sprinkle with toasted sesame seeds and give it a final toss.
