4 bone-in, skin-on chicken thighs

3 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon rice vinegar

1 tablespoon vegetable oil

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, salt, and pepper. Whisk until smooth. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Sear the Chicken: In an oven-safe skillet, heat vegetable oil over medium-high heat. Remove the chicken thighs from the marinade, allowing excess marinade to drip off, and place them skin-side down in the skillet. Sear for 5-6 minutes until the skin is crispy and golden brown.

        Transfer to Oven: Carefully flip the chicken thighs over and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

          Glaze the Chicken: During the last 5 minutes of baking, brush any remaining marinade over the chicken to glaze it well.

            Garnish and Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving. Enjoy with steamed rice or stir-fried vegetables!
