1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons vegetable oil (divided)

1 cup bell peppers, sliced (mixed colors)

1 cup snap peas, trimmed

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon brown sugar

2 teaspoons cornstarch

1 tablespoon sesame oil

2 green onions, sliced (for garnish)

Cooked jasmine rice or noodles (for serving)

Instructions
 

Marinate the Beef: In a bowl, mix the soy sauce, oyster sauce, brown sugar, and cornstarch. Add the sliced flank steak and toss together until the beef is well coated. Let it marinate for at least 15 minutes while you prep the vegetables.

    Preheat the Pan: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until hot.

      Cook the Beef: Add the marinated beef to the hot pan in a single layer (work in batches if necessary) and sear for about 2-3 minutes without moving them too much. Allow them to brown. Once cooked, remove from the pan and set aside.

        Sauté the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Toss in the sliced onion and sauté for 2 minutes until translucent. Add the bell peppers, snap peas, garlic, and ginger; stir-fry for an additional 3-4 minutes until the vegetables are tender yet crisp.

          Combine and Finish: Return the beef to the pan with the vegetables. Drizzle with sesame oil, and stir everything together, allowing the flavors to meld for another 1-2 minutes. Adjust seasoning with a little more soy sauce if desired.

            Serve: Plate the stir fry over hot jasmine rice or noodles, and garnish with sliced green onions.
