Ingredients
  

8 large eggs

1 cup fresh asparagus, trimmed and cut into 1-inch pieces

1/2 cup cherry tomatoes, halved

1/2 cup finely chopped onion

1/2 cup grated Parmesan cheese

1/2 cup milk

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh basil or parsley, for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

      Add the asparagus to the skillet and cook for another 3-4 minutes until slightly tender. Stir in the cherry tomatoes and cook for an additional 2 minutes.

        In a mixing bowl, whisk together the eggs, milk, Parmesan cheese, salt, black pepper, and red pepper flakes until well combined.

          Pour the egg mixture into the skillet over the sautéed vegetables. Stir gently to distribute the veggies evenly.

            Cook on the stovetop for about 5 minutes until the edges start to set, then transfer the skillet to the preheated oven.

              Bake for 15-20 minutes, or until the frittata is puffed and the center is set.

                Remove from the oven, let it cool for a few minutes, then slice into wedges.

                  Garnish with fresh basil or parsley before serving.
