1 lb (450g) breakfast sausage (pork or turkey)

8 large eggs

2 cups milk (whole or low-fat)

1 cup shredded cheddar cheese (plus more for topping)

1 cup diced bell peppers (red and green)

1 cup diced onion

2 cups frozen hash browns (thawed)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

Fresh herbs (like parsley or chives) for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Sausage: In a large skillet, over medium heat, crumble and cook the breakfast sausage until browned and fully cooked. Drain excess grease if necessary and set aside.

      Sauté the Vegetables: In the same skillet, add the diced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

          Layer the Casserole: In the greased baking dish, spread the hash browns evenly across the bottom. Next, layer the cooked sausage and sautéed vegetables over the hash browns. Pour the egg mixture over all the layers, then sprinkle the shredded cheddar cheese on top.

            Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the egg is set and the top is golden brown. You may sprinkle additional cheese on top during the last 10 minutes for extra cheesiness.

              Let it Rest: Once done, remove the casserole from the oven and let it sit for 5-10 minutes before slicing. This allows it to firm up slightly for easier serving.
