1 whole chicken (about 3-4 lbs), cut into pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons tandoori masala

1 tablespoon paprika

1 tablespoon ground cumin

1 teaspoon turmeric powder

1 tablespoon garam masala

1 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

Fresh cilantro, for garnish

Lemon wedges, for serving

Prepare the Marinade: In a large mixing bowl, combine the yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, tandoori masala, paprika, ground cumin, turmeric powder, garam masala, cayenne pepper, and salt. Mix well to create a smooth marinade.

    Marinate the Chicken: Add the chicken pieces to the marinade, making sure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or, for best results, overnight.

      Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a convection setting, use it to get a better crispy texture.

        Prepare for Baking: Line a baking tray with aluminum foil and place a wire rack on top. Arrange the marinated chicken pieces in a single layer on the rack. This allows heat to circulate around the chicken.

          Bake the Chicken: Bake the chicken in the preheated oven for about 30-35 minutes, turning halfway through, until cooked through and slightly charred. For a smokier flavor, you can broil the chicken for an additional 2-3 minutes at the end.
