Ingredients
  

2 ripe avocados, diced

1 large ripe mango, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 red bell pepper, diced

¼ cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon extra virgin olive oil

Salt and pepper to taste

Optional: 1 jalapeño, finely diced (for a spicy kick)

Instructions
 

In a large bowl, combine the diced avocados, mango, cherry tomatoes, red onion, and red bell pepper.

    Add the chopped cilantro to the bowl.

      In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

        Pour the dressing over the salad ingredients, gently tossing everything together until well coated, taking care not to mash the avocados.

          If using, add the diced jalapeño and mix gently to incorporate.

            Taste and adjust seasoning with more salt, pepper, or lime juice if necessary.

              Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
