4 slices of thick whole grain bread

2 ripe avocados

4 large eggs

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Red pepper flakes (optional, for added heat)

Instructions
 

Preheat your oven to 375°F (190°C).

    Lightly grease a baking dish with olive oil to prevent sticking.

      Arrange the slices of bread in the baking dish, making sure they fit snugly and cover the bottom.

        In a bowl, mash the ripe avocados with garlic powder, salt, and pepper until smooth. Taste and adjust seasoning if necessary.

          Spread the mashed avocados evenly over the slices of bread in the baking dish.

            Crack an egg on top of each slice of bread, being careful to keep the yolk intact.

              Scatter the halved cherry tomatoes and crumbled feta cheese evenly over the eggs.

                Drizzle a bit of olive oil over the whole dish for extra flavor.

                  Season with additional salt, pepper, and red pepper flakes if desired.

                    Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set, and the yolks are cooked to your preferred doneness.

                      Remove from the oven and let cool for a few minutes. Garnish with fresh parsley or cilantro before serving.
