Ingredients
  

2 ripe avocados, diced

1 cup fresh strawberries, hulled and sliced

1 cup sweet corn (fresh, frozen, or canned)

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper, to taste

1/4 cup feta cheese, crumbled (optional)

Instructions
 

In a large mixing bowl, combine the diced avocados, sliced strawberries, and sweet corn.

    Add the finely chopped red onion and fresh cilantro to the bowl.

      In a small bowl, whisk together the lime juice, olive oil, and honey (if using) until well combined.

        Drizzle the dressing over the salad and gently toss to combine, being careful not to mash the avocados.

          Season with salt and pepper to taste, adjusting the flavor as desired.

            If using, sprinkle the crumbled feta cheese over the top of the salad before serving.

              Serve immediately, or let it chill in the refrigerator for 15-20 minutes to meld the flavors.
