Ingredients

2 cups granulated sugar

1/2 cup unsalted butter

1/2 cup heavy cream

1 cup semi-sweet chocolate chips

1/2 cup Bailey's Irish Cream

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup chopped walnuts or pecans (optional)

Instructions

Prepare the Pan: Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal. Set aside.

Combine Ingredients: In a medium saucepan over medium heat, combine granulated sugar, butter, and heavy cream. Stir continuously until the mixture comes to a boil.

Cook until Thickened: Allow the mixture to boil for about 4-5 minutes while stirring occasionally until it thickens slightly. You want it to reach a soft-ball stage (about 235°F or 112°C on a candy thermometer).

Add Chocolate and Flavors: Remove the saucepan from the heat. Quickly stir in the chocolate chips, Bailey's Irish Cream, vanilla extract, and salt until the chocolate is fully melted and the mixture is smooth.

Incorporate Nuts: If using, fold in the chopped walnuts or pecans until evenly distributed.

Transfer to Pan: Pour the fudge mixture into the prepared baking pan and spread it into an even layer using a spatula.

Cool and Set: Allow the fudge to cool at room temperature for about 2-3 hours, or until it’s fully set. For quicker setting, you can place it in the refrigerator for about an hour.

Slice and Serve: Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into squares and serve. Enjoy your decadent Bailey’s Irish Cream fudge!
