Ingredients

1 cup fresh blueberries (or frozen, if unavailable)

1 ½ cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup granulated sugar

1 large egg

½ cup buttermilk (or milk with a splash of vinegar)

¼ cup unsalted butter, melted

1 tsp vanilla extract

Zest of 1 lemon

Powdered sugar (for dusting)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) and lightly greasing a mini muffin tin or lining it with paper liners.

Prepare the Blueberries: If using fresh blueberries, rinse them under cold water and pat dry. If using frozen, ensure they are thawed and gently pat dry.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and granulated sugar. Whisk thoroughly to blend.

Combine Wet Ingredients: In a separate bowl, whisk together the egg, buttermilk, melted butter, vanilla extract, and lemon zest until well combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, and mix until just combined. Do not overmix; some lumps are okay. Gently fold in the blueberries, taking care not to crush them.

Fill the Muffin Tin: Spoon the batter into each mini muffin cup, filling them about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for about 15-18 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and Dust: Once baked, remove the fritter bites from the oven and let them cool for about 5 minutes in the tin before transferring them to a wire rack. After they have cooled slightly, dust with powdered sugar for an extra touch of sweetness.

Serve and Enjoy: Serve your Baked Blueberry Fritter Bites warm or at room temperature as a delightful snack or breakfast treat!
