Ingredients
  

  • 1 wheel Brie cheese about 8 ounces
  • 1/2 cup pistachios shelled and roughly chopped
  • 1/4 cup honey preferably local or organic
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon olive oil for drizzling
  • 1/2 teaspoon sea salt to taste
  • 1 loaf French baguette for serving
  • 1 teaspoon black pepper freshly cracked
  • 1 teaspoon vanilla extract optional for extra flavor

Instructions
 

  • Preheat your oven to 350°F (175°C). Place the wheel of Brie in a small baking dish or on a parchment-lined baking sheet.
  • In a small bowl, mix together the chopped pistachios, honey, chopped rosemary, and vanilla extract if using. Stir until well combined.
  • Spread the pistachio honey mixture evenly over the top of the Brie. Drizzle with olive oil and sprinkle with sea salt and black pepper.
  • Bake in the preheated oven for 20-25 minutes, or until the Brie is soft and gooey but not melted all the way through. Keep an eye on it to avoid overcooking.
  • While the Brie is baking, slice the French baguette into thin rounds and toast them lightly in the oven or on a grill.
  • Once the Brie is done, remove it from the oven and let it rest for a couple of minutes before serving. Serve warm with toasted baguette slices.

Tip 1: For added flavor, consider adding a pinch of cinnamon or nutmeg to the honey mixture.
