2 cups cooked chicken, shredded or cubed

2 medium zucchinis, sliced into rounds

1 cup cherry tomatoes, halved

1 cup bell pepper, diced (red or yellow)

1 cup onion, diced

3 cloves garlic, minced

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup ricotta cheese

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and the onion becomes translucent (about 3-4 minutes).

      Sauté Zucchini and Peppers: Add the sliced zucchini and diced bell pepper to the skillet, stirring for another 5-7 minutes, until they begin to soften. Stir in the cherry tomatoes and cook for an additional 2-3 minutes. Season with Italian seasoning, salt, and black pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, ricotta cheese, and half of the mozzarella cheese. Mix until well combined.

          Layer the Casserole: In a greased baking dish, spread the chicken and vegetable mixture evenly. Top with the remaining mozzarella cheese and sprinkle the grated Parmesan over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After this time, remove the foil and bake for an additional 10-15 minutes, or until the top is bubbly and golden brown.

              Garnish and Serve: Once out of the oven, allow to cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy your hearty casserole!
