4 boneless, skinless chicken breasts

2 large bell peppers (one red, one yellow), sliced

1 large onion, sliced

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional, for heat)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, mix together the minced garlic, smoked paprika, oregano, thyme, red pepper flakes, olive oil, lemon juice, salt, and pepper.

      Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours for deeper flavor).

        Prepare Vegetables: In a separate baking dish, combine the sliced bell peppers and onion. Drizzle with a bit of olive oil, salt, and pepper, and toss to combine.

          Arrange in Baking Dish: Place the marinated chicken breasts on top of the vegetables in the baking dish. Spoon any remaining marinade over the chicken.

            Bake the Dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and has a golden brown exterior (internal temperature should reach 165°F or 75°C).

              Serve: Once done, let the chicken rest for 5 minutes. Garnish with freshly chopped parsley before serving. Enjoy the baked chicken with the roasted bell peppers and onions on the side!
