Ingredients

1 lb (450g) chicken thighs, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 cup panko bread crumbs

1 tsp garlic powder

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1/4 cup honey

2 tbsp hot sauce (e.g., Frank's RedHot)

1 tbsp apple cider vinegar

Cooking spray or olive oil for drizzling

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, paprika, cayenne pepper, salt, and pepper. Add the chicken thighs and ensure they are fully coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for the best flavor.

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare Coating: In a shallow dish, mix the flour, salt, and pepper. In another dish, add the panko bread crumbs.

Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, shaking off the excess, then dip back into the buttermilk, and finally coat with the panko bread crumbs, pressing down to adhere well.

Arrange on Baking Sheet: Place the coated chicken pieces on the prepared baking sheet. Lightly spray or drizzle olive oil over the top to help achieve a crispy texture.

Bake: Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown and crunchy.

Prepare Hot Honey Sauce: While the chicken is baking, in a small saucepan over low heat, combine honey, hot sauce, and apple cider vinegar. Stir until warm and well mixed. Adjust the heat levels by adding more hot sauce if desired.

Serve: Once the chicken is finished baking, drizzle the hot honey sauce over the crispy chicken pieces and serve immediately. Optionally, garnish with chopped fresh parsley or sesame seeds for added flavor and presentation.
