Baked Egg Rolls with Ground Turkey

1 pound ground turkey

1 cup coleslaw mix (shredded cabbage and carrots)

1/2 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sriracha (optional, for heat)

1 package egg roll wrappers (about 20 sheets)

Cooking spray or olive oil for brushing

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Cook the Turkey: In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and ginger, sauté for about 1 minute until fragrant. Add ground turkey, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Season with salt, pepper, and stir in soy sauce and sriracha; mix well.

      Add Veggies: Stir in the coleslaw mix and green onions. Cook for an additional 2-3 minutes until the cabbage is slightly softened. Remove from heat and let the mixture cool slightly.

        Wrap the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond). Place about 2 tablespoons of the turkey mixture near the bottom corner. Fold the corner over the filling, tuck in the sides, and roll it up tightly. Seal the top edge with a little water. Repeat with remaining wrappers and filling.

          Bake: Place the rolled egg rolls seam-side down on the prepared baking sheet. Lightly spray or brush them with cooking spray or olive oil. Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and crispy.

            Serve: Allow the egg rolls to cool for a few minutes before serving. Pair with sweet chili sauce or soy sauce for dipping.
