Ingredients

1 block of feta cheese (about 200g)

2 cups cherry tomatoes, halved

1 cup pitted Kalamata olives (or green olives)

4 cloves garlic, minced

1 teaspoon dried oregano

¼ teaspoon red pepper flakes (optional)

3 tablespoons extra virgin olive oil

Fresh basil leaves for garnish

Salt & pepper to taste

Instructions

Preheat your oven to 400°F (200°C).

In a large baking dish, place the block of feta cheese in the center.

Surround the feta with halved cherry tomatoes and olives.

Drizzle the olive oil over the feta and the vegetables.

Sprinkle minced garlic, dried oregano, red pepper flakes (if using), salt, and pepper over the entire dish.

Bake in the preheated oven for about 25-30 minutes, or until the feta is soft and starts to brown slightly, and the tomatoes are blistered.

Carefully remove it from the oven and let it cool for a few minutes.

Use a fork to mix the baked feta with the tomatoes and olives, creating a creamy sauce.

Garnish with fresh basil leaves before serving.

Serve warm with crusty bread, pita chips, or as a part of a charcuterie board.
