Ingredients
  

4 halibut fillets (6 oz each)

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1 medium red onion, thinly sliced

1 cup fresh basil, chopped

3 tbsp olive oil

1 tsp balsamic vinegar

Salt and pepper to taste

1 tsp dried oregano

1 lemon, sliced

Grated Parmesan cheese (optional, for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved cherry tomatoes, minced garlic, sliced red onion, chopped basil, olive oil, balsamic vinegar, salt, pepper, and dried oregano. Toss everything together until well coated.

      On a baking sheet lined with parchment paper, arrange the halibut fillets in the center. Season each fillet with a pinch of salt and pepper.

        Spoon the tomato mixture generously over the halibut fillets, ensuring they are well covered. Place lemon slices on top of the tomatoes for added flavor.

          Bake in the preheated oven for about 20-25 minutes, or until the halibut is cooked through and flakes easily with a fork.

            Once cooked, remove from the oven and let it rest for a minute. If desired, sprinkle with grated Parmesan cheese before serving.

              Serve hot, garnished with extra fresh basil and lemon wedges on the side.
