400g (14 oz) rigatoni or penne pasta

500g (1 lb) fresh mozzarella, cubed

400g (14 oz) canned San Marzano tomatoes, crushed

4 cloves garlic, minced

1 small onion, finely chopped

50g (1/2 cup) grated Parmesan cheese

50g (1/2 cup) grated pecorino cheese

Fresh basil leaves, torn (about 1 cup)

4 tablespoons extra virgin olive oil

Salt, to taste

Freshly ground black pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 190°C (375°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta until al dente, according to the package instructions. Drain and set aside.

      Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.

        Add Tomatoes: Pour in the crushed San Marzano tomatoes, season with salt and pepper, and simmer for about 15 minutes, allowing the sauce to thicken slightly.

          Mix Ingredients: In a large mixing bowl, combine the cooked pasta, tomato sauce, cubed mozzarella, torn basil leaves, half of the grated Parmesan, and half of the grated pecorino. Mix everything together until well combined.

            Bake the Pasta: Transfer the pasta mixture into a greased baking dish (approximately 9x13 inches). Top with the remaining mozzarella and sprinkle with the rest of the Parmesan and pecorino cheese.

              Final Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven, let cool slightly, then garnish with additional basil leaves if desired. Serve warm and enjoy!
